450g dried spaghetti
Half a cup of olive oil
6 to 8 cloves Mt Budd garlic, thinly sliced
Half a teaspoon of crushed red pepper flakes
Optional garnishes: chopped parsley, parmesan cheese
1. Bring a large pot of salted water to the boil and add spaghetti. Cook until nearly al dente.
2. Heat the olive oil in a large sauté pan over medium heat. Add the sliced garlic and red pepper flakes and sauté for 3 minutes or until it is lightly golden. Do not burn the garlic.
3. Toss the pasta into the sauté pan together with half a cup of the hot starchy pasta water. Toss the pasta continuously until it is evenly coated in the garlic sauce.
4. Taste and season with an extra pinch of salt if needed.
5. Serve the spaghetti with chopped parsley and a little grated parmesan cheese.
